The myth of Rabaj\u00e0 is not only of a natural order. Those who cultivate it have developed a meticulous and maniacal attention to quality, conducting agriculture that is very attentive to the environment and sustainability. Rabaj\u00e0 is rightfully &#8220;the garden&#8221; of Barbaresco, a coveted place among winemakers where man and landscape have achieved a perfect balance of form and substance. This is the &#8220;spirit of the terroir&#8221; that Marolo is constantly searching for: the invisible signs that terroir patiently chisels into the raw material and that the art of distillation &#8211; daughter of alchemy &#8211; pursues with artisanal patience, crush after crush, drop by drop. Our Grappa di Barbaresco Rabaj\u00e0 is the result of a double expertise: that of the winemakers, who knew how to enhance the 2006 vintage, and the mastery of the grappa maker, who has the duty not to betray that uniqueness. Picked very fresh, the pomace receives the most scrupulous attention: a very slow and completely manual bain-marie distillation, aimed at releasing the strength and persuasiveness of the aromas. Aging, designed to preserve the characteristics given by the terroir of origin, gives a grappa with a very high organoleptic profile.
