Dried Tomatoes

Apulian sun-dried tomatoes are a concentrate of Mediterranean flavors and aromas, ideal to enjoy in their simplicity for an aperitif at home and perfect for creating original and tasty dishes. Grown in Puglia, simply soak them for five minutes in a solution of hot water (95 percent) and wine vinegar (5 percent) with three bay leaves and a few fresh peppercorns, and finally dry them on a clean tea towel. Store them in a glass jar with olive oil, garlic and herbs to taste. To make the most of them, try dried tomatoes in oil on pizza. You will see how wonderful they are!
